From Italy to Greenwich Village to Denver

The Greenwich’s new chapter is inspired by owner Delores Tronco’s Italian grandparents, Carlo and Mary, who immigrated through Ellis Island to New York and New Jersey, making a living running a local produce cart, bakery, and fish shop. Delores’ passion for hospitality is rooted in her family history and the recipes her grandmother passed on to her.

Delores’ love affair with New York City began early as her father, Ernie, spun many stories about growing up in the city. At 9 years old, she vowed to move to NYC, declaring that, “people just say what they think there.” In her early 30s, she lived out her dreams, opening the restaurant The Banty Rooster in Manhattan. She later returned to Colorado where she found creative parallels between Greenwich Village and RiNo Art District. 

In 2021, The Greenwich opened its doors, originally embracing an eclectic New-American concept, which was met with critical and popular acclaim from locals and visitors alike.

In September 2023, Luke Miller, the restaurant’s long-time chef de cuisine and pastry expert, transitioned into the executive chef role at The Greenwich. This marked the beginning of a new chapter as Delores and Chef Luke imagined what The Greenwich 2.0 would become.

As they considered what menu items The Greenwich was known for, they knew that the sour dough pizza and cheesecake were mainstays. From there it was a natural leap to embrace a more fully Italian concept, with a large selection of affordable small plates (piccolini), shareable dishes, Italian-inspired cocktails, and Old World wines.

The Greenwich Believes:

 That the best restaurants are the ones you can come back to over and over again.

 That great food doesn’t have to be overly complicated, and that going the extra mile should be a given.

 That a great playlist at just the right volume matters.

 That coming together for a meal at the end of the day will always be an experience that we all share, no matter who we are or where we come from. A

 And that the best restaurants have a bit of magic to them that inspires and comforts even the toughest eggs to crack.

Six nights a week, we’ll welcome you into our dining room—whether it be your first time or hundredth, a special occasion or a Tuesday night when you’re just too tired to cook, a born and raised Denverite or a visitor to our great city—with open arms, full hearts, and some of the fiercest food you’ve ever eaten, because that’s the way we believe hospitality should be.
