With over 18 years of experience in the hospitality industry, Delores Tronco developed and designed the restaurant’s concept and interior and actively oversees the restaurant’s operations, wine, and bar programs. Prior to The Greenwich, Tronco held various leadership roles, including Founder/CEO of Work & Class, her first restaurant in Denver, Founder/Director of beloved Denver pop-up The Justice League of Street Food, and Founder of The Banty Rooster in New York City’s West Village. The Greenwich, located in Denver’s RiNo Art District, opened its doors in Fall 2021. In July 2024, Tronco teamed up with Executive Chef Luke Miller to ideate and launch The Greenwich 2.0 new Italian-focused concept inspired by her Italian heritage and providing great food at approachable prices.
As an established restaurateur, Tronco is committed to creating a restaurant that is a living, breathing incarnation of everything she cares deeply for: hospitality, excellence in craft, leadership with integrity, and the people who make great restaurants the special places they are. The Greenwich fosters a culture that allows the restaurant to do just that and aims to deliver an incredible culinary experience to match. In addition to overseeing the restaurant’s operations, Tronco is a Wine & Spirit Education Trust (WSET) level 3 certified Sommelier, and directs the wine program at The Greenwich, creating a well-curated and diverse list of bottles ranging from familiar favorites to newer, more esoteric styles and producers.
Outside the restaurant, Tronco is an avid reader, runner, yogi, and baker who can often be found with her Colorado Mountain Dog, Mr. Charlie, who is also The Greenwich’s Employee of the Month (forever).

Executive Chef
Originally from Libertyville, Illinois, Executive Chef Luke Miller moved to Colorado in 2011 to study philosophy at Colorado State University before discovering his passion for cooking. Three years later, he earned his degree in Culinary Arts from Johnson & Wales University, Denver. Throughout his 10 years of culinary experience, Chef has held various back-of-house leadership positions including Head Baker at The Denver Bread Company, Exec Sous Chef at Arcana, and Head Baker at Dry Storage before joining the team at The Greenwich in 2021. In July 2024, he and owner and founder Delores Tronco, evolved the restaurant’s concept into The Greenwich 2.0, an Italian-focused, seasonal-driven menu.
Along with all The Greenwich’s savory dishes, Chef Luke is the pastry mastermind behind all our bread, doughs, and desserts. He draws inspiration from local, seasonal ingredients, childhood nostalgia, and pushing creative boundaries to reinvent Italian classics.

Outside the restaurant, Chef Luke enjoys spending time with his family and jamming to midwestern emo music.
